We’ve all heard the saying, “If you fail to plan, you plan to fail.” This is not only true in life, but definitely when it comes to sticking to a healthy eating plan. For me, Sunday nights have become meal prep night to plan out all my meals for the week. I really enjoy making dishes that are both quick and easy. This week, I cooked five lunches using only five items that was super simple to make.
The five ingredients I used were: mixed vegetables, rice pilaf, turkey burgers, linguine, and spaghetti sauce. The first dish I made was spaghetti with turkey. I started by breaking up a turkey burger and scrambling the meat in a large skillet until it was cooked completely. While the meat was cooking, I boiled the linguine noodles in a pot of water. After draining off the water from the noodles I added the ground turkey and spaghetti sauce to the noodles and stirred everything together. Super quick dish and very tasty!
The next dish I made was turkey patties with rice pilaf and mixed vegetables. I started by adding 1 tsp of oil to a large skillet and placing the turkey burgers inside. Chefs tip: Always season your meat to give a dish more flavor. While the burgers fried, I started on the rice by sautéing the rice in butter over medium heat and let it brown. Next, water is added to the rice, and it is left to simmer over low heat for about 15 minutes. Make sure to turn your burgers to the other side while your rice is cooking. Then, for the last part, I heated the mixed vegetables over a low heat while I waited on the burgers and rice to finish cooking.
Bon appetite! Now I have some healthy lunches that are quick and easy to grab for work. What are some of your favorite go-to dishes? Share your recipes in the comments area below.
